Love lasagna but need a quick dinner recipe? We swapped out the lasagna noodles for rotini pasta to make this simple skillet version of an Italian favourite.
2 pouches simulated ground beef
2 cups uncooked rotini pasta
2 cups cottage cheese
2 cups Cracker Barrel Shredded Mozzarella Cheese
1 jar (650 mL) Classico di Napoli Tomato & Basil Pasta Sauce
Mix 1 can (680 mL) pasta sauce and 2 pouches simulated ground beef. In a separate bowl, combine 2 cups reduced fat cottage cheese, 1 1/2 cups Kraft Mozzarella Shredded Cheese and 2 beaten eggs.
Spray a 13 x 9-inch baking dish with non-stick cooking spray. Spread half the sauce mixture in bottom of dish. Top with cottage cheese mixture, 2 cups uncooked rotini pasta and remaining sauce mixture. Cover with foil.
Bake at 350°F for 30 minutes. Remove foil; bake 30 minutes more. Let stand 10 minutes before serving. Top with 1/2 cup more mozzarella cheese just before serving.
